Behind the Scenes: Learn About Chef Bobby Tessler and His Culinary History!

It’s an absolute fact – St. Louis Wing Company will definitely change the way you view chicken wings! That’s because Chef Bobby makes it his mission to create innovative, delicious dishes that will wow anyone, and he’s been doing that here at St. Louis Wing Co. for 5 fantastic years now!

Cooking has always been a passion of Chef Bobby, even going back as far as 20+ years ago! In fact, he started out on his culinary journey as a line cook at Ricardo’s in Lafayette Square and Sportsman’s Park in 1995 when he was a teenager. From there, he advanced to working at a golf resort in Southern Illinois at Quail Creek Country Club in 1996 for one year, where he worked under Executive Chef John Mikeworth. As his skills grew, he went on to become Head Chef at BB’s Jazz Blues & Soups downtown on Broadway – in fact, some of his original menu items are still on the menu!

Things began to really pick up for Chef Bobby when he attended culinary school at Sullivan University in Louisville, Kentucky in 1997. While he was in college, he was hand-selected by Olympic-winning chef instructors to become a member of the culinary competition team, which competed against other schools across the nation. This was a very big honor for Chef Bobby! In addition to this impressive feat, he worked as Chef de Cuisine at a very posh French bistro, Brasserie Dietrich. While he expanded his culinary skills, he had the honor of working with some of the most talented chefs in the City of Louisville.

As the new millennium arrived, Chef Bobby made his way back to beautiful St. Louis and became the Sous Chef at Remy’s Kitchen and Wine Bar in Clayton under Executive Chef Lisa Slay. He also made waves and took the reigns as the Executive Chef at Wildflower in the Central-West End, revamping the entire menu, composing a very extensive catering booklet, and structuring the entire operation from training cooks and servers.

Finally, Chef Bobby was able to spread his wings fully as Executive Chef at Once Upon A Vine, a restaurant in South Grand. He consistently created cutting-edge world cuisine for customers to enjoy and savor, using fresh seafood that was flown in twice each week and exotic ingredients that are not normally found on many St. Louis menus.

In 2004, things changed for Chef Bobby when he had a motorcycle accident. He took a temporary break from the restaurant life for a few years to travel and to pursue and enjoy his other passion – riding and stunt-riding motorcycles.

In 2011, Chef Bobby made history by opening the doors to the restaurant that we know and love today – St. Louis Wing Company. He wanted to focus on making excellent chicken wings like no other to knock the socks off anyone who would walk through the door. Today, he continues to wow the crowds by creating unique recipes with the freshest ingredients around.

Cheers to Five Years!

When it comes to chicken wings, Chef Bobby Tessler does it right. For the past five years, he’s been serving the St. Louis area with the #BestWingsInStLouis! We encourage you to look up the hashtag on Instagram; it will bring you joy and will make your stomach growl.

On April 4, 2016, St. Louis Wing Company celebrated their 5th anniversary with some of Bobby’s closest friends, family, and even the mayor! The party had all necessities including a customized St. Louis Wing Company cake, champagne, and, of course, Bobby’s famous wings! The featured wing of the night was Fresh Herb Scampi. It’s made with fresh Italian herbs, white wine, a hint of cream, and then topped with crispy breadcrumbs with a sprig of rosemary. This chicken wing is available throughout the month of April, so hurry in!

Why Wings? Well, Why Not?

Our very own Chef Bobby Tessler uses his passion for food and his culinary know-how to create unique wings that turn traditional chicken wing preparation on its head.

But why do we only do chicken wings? Simply because Chef Bobby loves ‘em.

“I could have, with just as much effort, opened a full-service, upscale restaurant if I wanted to. However, after working as a chef in those places for so many years and seeing so many ups and downs, that just didn’t appeal to me as much as it used to,” said Chef Bobby. “That’s why I focus on one of my favorite comfort foods and make it excellent and unique. I can continue playing with food. as I’ve always done while knocking the socks off customers with fun and interesting new ideas for chicken wings.”

The Wing-Eating Contest Was a Huge Success!

Webster Groves wing eating contestThey came, they ate, they conquered – and we got to host! On March 15th, eager student athletes from Webster Groves High School came out to gear up for their upcoming seasons. We hosted a wing-eating contest for the Webster Groves baseball teams and girls’ soccer teams. Needless to say, it was a riot!

A little friendly competition never hurt anyone, especially when it involves a wing-eating contest! In round one, the freshman baseball team took on the girls’ soccer team, coaches, and parents. After an intense few minutes of devouring wings smothered in our traditional hot sauce, the girls pulled out a win!

In the second round, the JV girls’ soccer team challenged the JV baseball team. It was a close call, but in the end the baseball team claimed victory as they rapidly inhaled the spicy chicken wings.

The last round of the night included the varsity girls’ soccer team and the varsity baseball team. The two teams were eager, but it seemed as though the varsity girls’ soccer team wanted it more, or they just had a bigger appetite!

We Are Pumping Up Webster Groves High School Athletes With a Wing-Eating Contest!

chicken wingsSpring is almost here, and teams everywhere in our local high schools are beginning to practice for their baseball, soccer, and volleyball seasons. St. Louis Wing Co. is getting in on the action by hosting a wing eating contest for Webster Groves High School’s baseball, soccer, and volleyball teams on Tuesday, March 15 at 6 p.m.!

Come out to see the athletes on Webster Groves High School’s teams compete against one another to see who can eat the most wings! We will be providing traditional hot wings to help these athletes get excited for their upcoming seasons. This event is open to the public, but come early because it’ll definitely be a packed house!

He also enjoys making creative wings that stray from the traditional sense such as spinach artichoke dip turned into a wing sauce or a “Thanksgiving Dinner” on his chicken wings. Nothing is out of the realm of possibility when it comes to Chef Bobby and his wings!

St. Louis Wing Company Does Super Bowl 50 Right!

To many, Super Bowl means watching the big game on a huge flat-screen TV, knocking back a few beers, and chowing on some delicious game-day grub. To us, though, Super Bowl means the busiest day of the year. That’s right, we’re cranking out some of the most mouth-watering wings you can think of and enjoying the big game with some of the best customers around!

On Sunday, February 7, we made over 200 orders for football fans in St. Louis. That means in approximately 5 hours, we made over 13,000 wings, used 100 gallons of sauce, and hosted one heck of a party. Check out how much fun we had by watching the video below!
